Our unique process of freeze drying berries is a result of more than ten years of experience in scientific freeze drying and 15.000 hours of rigorous research and development work. Not only have we succeeded in preserving 94-97% of natural nutritients, the appearance is virtually identical to fresh berries and taste is naturally sweet, intense and delicious.
Shelf life for all packaged berries is 24 months.
Nordic strawberry is our candy. Compared to most strawberries grown in warmer climate they’re fairly small, only 20-30mm (3/4 to 1 1/4″) in diameter, but once you have tasted one, you’ll never want to go back. During the growth season Finland enjoys almost constant sunlight. Nordic strawberries are literally grown under the Midnight Sun, which gives them amazing, all natural sweetness and unmistakable, strong strawberry flavour.
Our strawberries are cultivated, mainly in central Finland in Suonenjoki region. Finland has amazing resources of fresh potable water (so much that in fact we wash our cars and flush our toilets with it) so that is used in irrigation systems as well. It may sound like a waste, but honestly, there’s little water in the whole country that isn’t potable and would need to be purified in any way. It gives us a great advantage: the berries have virtually nonexistent risk of contamination from water and – unlike most other strawberries – there’s no need to boil them before using them.
These are reasons enough for us to use finnish-grown berries, exclusively.
Bilberry is the crown jewel of nordic berries. It grows wild in most of rural Scandinavia and our 1st class bilberries are literally hand-picked in the wild, mainly at the region near the Arctic Circle in finnish Lapland.
It bears resemblance to common cultivated blueberry, being only a little smaller – just over a quarter of an inch or 7mm – in size, and taste is somewhat similar, only naturally sweeter and stronger. Inside bilberries are dark throughout.
Bilberries are a magnificient source of nutritients, the amount of metabolized antioxidants exceeding that of even goji berries. It’s a well-known berry in traditional japanese and chinese medicine, and the more its health effects have been researched by modern medicine during last few years, the more positive health effects have been found to be absolutely correct.
Bilberries are a fantastic addition to even the healthiest of diets and by far the only factor that has kept it from gaining popularity worldwide is availability. Cultivation is extremely difficult and the only practical way to harvest them is in the wild, picking them by hand in nature where they grow without any human intervention.
Lingonberry is one of our wild nordic berries. Like bilberry, it’s harvested in the wilderness of the Arctic Circle where it grows wild. Its flavonoids, lingans, vitamin A and C and antioxidants are preserved almost perfectly by our freeze drying process.
Lingonberry is a common ingredient in nordic cuisine, not least because its natural benzoic acids that have an antimicrobial effect, which is a major advantage when preparing foods. Because of its unique taste it can be used for warm main courses of meat and vegetarian alike, desserts and condiments like the traditional nordic delicacy of lingonberry sugar. It’s often called the most important forest berry of Scandinavia and for a good reason; in nordic countries using lingonberry for “everything” has made it understated for what it actually is.
